Ingredients

  • 4 eggs
  • 8 oz. smoked salmon, sliced
  • 2 russet or sweet potatoes, peeled and diced
  • ½ onion, sliced
  • ½ cup mushrooms, sliced
  • 2 cups fresh baby spinach
  • 1 garlic clove, minced
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • ¼ tsp. paprika
  • 2 tbsp. ghee
  • 2 tbsp. olive oil
  • Sea salt and freshly ground black pepper

Preparation

  1. Preheat oven to 425 F.
  2. Dice the potatoes, then drizzle with olive oil, onion powder, garlic powder, paprika, and season to taste.
  3. Place the potatoes on a baking dish, and bake in the oven for 25 to 30 minutes, turning at the halfway point.
  4. Bring a pot of water to a boil over high heat.
  5. Add the eggs to the boiling water, turn off the heat and cook for 6 to 7 minutes.
  6. Drain the water and run cold water over the eggs; peel the eggs and set aside.
  7. Melt the ghee over medium-high heat and add the onion and garlic.
  8. Cook for 1 to 2 minutes, then add the sliced mushrooms.
  9. Season everything to taste, and cook until everything is soft, 4 to 5 minutes longer.
  10. Add the spinach and cook until wilted, 1 to 2 minutes.
  11. Serve the potatoes, topped with the spinach-mushroom mixture, egg, and sliced smoked salmon.
